A couple possibilities:
1-Their board
2-They have nothing better to do than grief
3-They think its funny to see people get upset
4-They want stuff on a server and think that they can get away with griefing

ok actually this is why they grief...
1. they are bullies that like to make people really mad and think its funny to see people freak out.
2. they are jealous that the only thing they can build is a dirt house and TNT.
3. they have a youtube channel and they want to make a vid about being an !@#$%.
